Slow-roasted boneless lamb leg
Pairs with: Boneless leg $18.50/kg
Marinate overnight with garlic, rosemary, lemon, olive oil, salt, cracked pepper. Roast at 160°C for 3–4 hours covered, finish uncovered for 20 min.
Mince & rice
Pairs with: Beef mince $11.99/kg
Sauté onion, ginger, cardamom; add mince, brown; layer over basmati rice; steam 25 min.
Pan-seared rump
Pairs with: Rump $16.50/kg
Salt 40 min ahead. Sear hot, 3 min each side for medium-rare. Rest 5 min before slicing.
