A chuck roast is a tough but flavorful cut of beef from the shoulder. To make it tender enough to slice rather than shred, you must either cook it "low and slow" in a braising liquid (until it reaches 190–205°F) or treat it like a steak by reverse-searing it (to 130–145°F).
